Ricotta cheese freezes well so you can also save some for later. For this simple how-to, you need buttermilk, whole milk, a heavy bottom pot, a slotted spoon and cheesecloth. After making your ricotta, sprinkle with sea salt and lemon juice to brighten the flavors. We think it pairs nicely with some prosciutto for a road trip snack.
